This course provides you with specialist training in the field of Restaurant Sommelier and covers theory and practical knowledge of both Australian and imported wine.

The course is suitable for people within the industry either working in or wishing to progress into the role of sommelier in a fine dining restaurant.

What you will learn:

  • Professional sensory evaluation
  • Overview of viticulture and winemaking
  • In-depth knowledge on Australian wine regions
  • In-depth knowledge on beers, spirits and liqueurs
  • Overview of the major imported wine styles and regions
  • Practical food and wine matching
  • Designing, constructing and costing restaurant wine lists
  • Practice of the storage, sale and service of wine
  • The role of Sommelier
  • Introduction to the Australian Wine Industry

Entry Requirements

Students are required to hold a valid NSW RSA competency card.
